WESTBY, Wis – Birch Point Distillery is shaking up the craft spirits scene in Wisconsin with a groundbreaking ceremony for the state’s first distillery to craft spirits from sheep’s milk. Join us on November 19, 2024, at 10:00 a.m., as the Birch Point team officially breaks ground and sets the stage for a truly unique, sustainable distilling experience right here in Westby.
Co-founders Scott and Staci Kring are longtime advocates for sustainable practices. Their mission is to turn something simple — sheep’s milk sugars, a byproduct of cheese production — into a smooth, delicious spirit that brings out the best of local resources.
Birch Point will join only a handful of distilleries worldwide creating spirits from sheep’s
milk, making it a rare and pioneering endeavor in the industry.
“This groundbreaking is like a dream in the making. We’re not just building a distillery; we’re creating something special for Wisconsin,” says Scott Kring. “It’s about sustainable spirits with a story, rooted right here in our community.”
